I tried my hand at the Spicy Potato Corn Chowder from Saucy Spatula for dinner last night, and it was just amazing! I don’t make soup very often, but every time I do, I seem to feel like I’m sweating over a hot stove for hours, boiling, simmering, stirring. This was not that kind of soup! It took me about 35  minuttes, and most of that was just was just waiting for the potatoes to boil. I don’t have a single complaint about this recipe. It was perfectly spicy (I went with 1/4 teaspoon of cayenne) and the potato-to-corn ratio was spot on. I served mine with crescent rolls and was set for a perfect Sunday dinner.
